Crystallized consistency. Filled in glass jar. About Heather honey Heather honey has a slightly bitter taste and strong, pleasant flavour. It is one of the most healing honeys. Harvesting time is August. It grows in swamps and forests. Honey color can be from dark yellow till reddish brown. Unlike other honeys, heather honey is squeezed out of the combs because of its jelly kind of structure. Since fructose in this honey is more than glucose, it crystallizes much slower than other honeys and does not set completely unlike most of honeys. In the jars, heather honey can be identified by tiny air bubbles throughout. Honey. Latvia. Briefly. Latvia is a country with beautiful and clean nature in the Baltic region of Northern Europe. Honey harvesting year in Latvia lasts only for about 3 months. The rest of the time bees accumulate. In the South honey harvesting is almost whole year. Whereas in the South the air temperature is higher, nectar excrete from a flowering plant much more rapidly, and as a result minerals in nectar is far less. The farther to the North, the honey is more valuable, because that plants bloom longer and receive more minerals. Therefore, the resulting honey in Latvia is about 10-15 times more biologically active than Southern rivals.
