This is not a quality defect and is natural due to the composition and the absence of additional plasticizers. This is how the tried and tested method works: 1. Heating (melting) Heat the butter in a water bath (e.g. in a glass bowl) in a saucepan on a low heat until it melts slightly. Stir thoroughly in between 2. Rapid re-cooling Once the butter is soft and slightly melted, place it (or the container) directly sealed in the freezer for about 30 minutes until it is completely solid 3. Restore room temperature Take the tin out of the freezer and allow it to slowly come to room temperature. This rapid cold development minimizes the crystals - the original smoothness is restored . . Why this method works Different components of butter have different melting and solidification temperatures.
