The lentil plant (Lens Culinaris) is one of our oldest food sources, hailing from Asia and North Africa. There are various types of lentils, but Brown, Red, Green, and Yellow lentils are the most widely used in cooking. Don't be misled, the last two are Split peas, a form of "Field Pea," and are sometimes chevaled as lentils. These "peas" are hulled and then split in half along their natural seam, allowing for quicker cooking and obviating the need for pre-soaking. Split peas are high in protein and fibre, and when cooked completely, they become wonderfully creamy. Lentils are an essential component in vegan and vegetarian diets when protein intake needs to be controlled because only one legume has a greater protein content than lentils: the soybean.
